Yes, you read that title right! Seriously, I mean, apples, cream cheese and cinnamon rolls. How could you go wrong? It’s so easy to make – trust me, I don’t bake often and I’ve made this 4 times now. It’s the perfect dish if you need something for a family breakfast, work meeting, or you just feel like baking something!
I actually came across this recipe from a Youtube video from Meghan Rienks. Click here to see that video! I changed things up just a tiny bit, so below is my version!
What you’ll need:
1 bundt pan
2 packages of Pillsbury cinnamon rolls *
3-4 apples (I’ve used both Gala and Green Apples)
1 package of cream cheese
1 bag of crushed pecans (or your favorite nut)
3/4 stick of butter
1 cup of brown sugar
* I tried this once with store brand cinnamon rolls, but they didn’t poof up quite as much as the Pillsbury brand ones.
Part One – Making stuffed cream cheese and stuffed apple pieces
Step 1: Open one package of the Pillsbury cinnamon rolls
Step 2: Flatten out the cinnamon rolls and cut into strips. Spoon some cream cheese and roll up into a ball
Keep making cream cheese pieces until you’ve used up all of the first package of cinnamon rolls. Place these in the fridge and now it’s time to open the second package and work on making the stuffed apple part.
Step 3: We’re going to do the same thing we did with the cream cheese, except we’re going to peel and dice the apples. I usually go through about 1.5 to 2 apples depending on how many strips I get out of the cinnamon rolls.
Part 2 – Making the butter and brown sugar drizzle
Step 1: Measure out 1 cup of brown sugar and set aside
Step 2: Melt 3/4 stick of butter in a bowl (once melted, we’re going to be adding the brown sugar so choose a bowl that’s big enough to hold 1 cup of brown sugar)
Step 3: Once the butter has melted completely, mix in the brown sugar
Part 3 – Assembling the monkey bread!
* Start preheating your oven to 350 degrees
Step 1: Spray the bundt pan with non-stick spray
Step 2: Sprinkle a layer of crushed pecans (or your choice of nut) into the bottom of pan
Step 3: Add in half of both the stuffed cream cheese and and apple pieces making sure to sprinkle them around the pan evenly mixed together. OPTIONAL – I love apples, so I peeled and chopped up another apple and sprinkled those pieces in with the stuffed pieces as well.
Step 4: Spoon half of the brown sugar and butter drizzle onto this first layer
Step 5: Sprinkle in the rest of the cream cheese, apple pieces and crushed pecans. Top off with the remaining brown sugar and butter drizzle.
Part 4 – BAKE IT
Bake at 350 degrees for 30-40 minutes. If you’ve added in some extra slices of apples, I’d bake it for closer to the 40 minute mark to ensure that the cinnamon rolls are throughly cooked with the added moisture from the extra apple slices.
And now all that’s left is to let it cool, remove it from the pan, and enjoy! Be prepared, you’ll definitely be asked to bring this dish again! It was a major hit with my coworkers and my family as well!
